Apricot Loaf


  • 200 grams dried apricots, chopped
  • ½ cup sultanas
  • 1 cup boiling water
  • 1 cup caster sugar
  • 1 tablespoon butter or margarine
  • 1 egg
  • 1 1/2 cup SR flour
  • ½ cup Lupin Flour



Pour boiling water over apricots and sultanas in large bowl.

Add butter and sugar, mix well. Add egg and flour, mix well.

Pour into a greased loaf tin.

Bake 200°C for about 45 minutes.

Serve buttered when cool.


Handy Hints

  • Chop the apricots using scissors
