Bacon and Cheese Muffins

Ingredients:

  • 1 ½ cup self-raising flour
  • ½ cup Lupin Flour
  • 1 Tbsp sugar
  • 1 tsp cream of tartar
  • 1 tsp bicarb soda
  • ¼ tsp salt
  • 1 cup Cheddar cheese (grated)
  • 1 cup diced bacon
  • 2 tbsp chives or fresh parsley
  • 1 egg
  • 1 cup milk
  • ¼ cup vegetable oil
  • 1 tsp lemon pepper
  • 1 tsp garlic powder

 

Method:

Preheat the oven at 180C

Mix all ingredients gently, until just blended (do not over mix)

Spoon into greased muffin trays

Cook about 15 minutes

 

Note:

Use silicone muffin trays, as you do not need to grease them and the muffins are easier take out
