Muesli Slice


  • 1 cup untoasted muesli
  • ⅔ cup self-raising flour (white or wholemeal)
  • ⅓ cup lupin flour
  • 1 cup rolled oats
  • ¾ cup desiccated coconut
  • 100g dried apricots (optional)
  • ½ cup raw sugar
  • 135g margarine
  • 2 tablespoons golden syrup
  • 1 egg


  1. Mix muesli, sifted flours, oats, coconut, chopped apricots and sugar together in a bowl.
  2. Melt margarine and golden syrup together over low heat in a small saucepan, pour into muesli mixture.
  3. Stir in lightly beaten egg.
  4. Mix all ingredients well.
  5. Spread and press mixture into a greased lamington tin. Cook in moderate oven for 30 minutes. Cool in the tin before transferring to a wire rack.

Handy Hints

  • Chop the apricots using scissors
  • Press the mixture into the tin using the base of a glass covered in gladwrap
