Nutty Chicken Bites



  • ½ cup Lupin Flour
  • 500g chicken breast
  • 1 egg
  • 1 tsp chicken stock powder
  • Salt and pepper to taste
  • 150g finely chopped peanuts
  • ½ cup finely crushed cornflakes
  • 2 tbsp olive oil



  1. Cut chicken into thin strips.
  2. Put in a plastic bag with flour, salt and pepper and stock. Toss until the chicken is well coated.
  3. In a separate bowl, mix peanuts and cornflakes.
  4. Beat the egg and milk together and dip the chicken pieces in it, then roll in the peanut mixture. Place on a dish and leave in the fridge for ½ hour, or until you are ready to cook them.
  5. Place oil in a shallow baking dish, heat, and then add chicken strips.
  6. Cook at 200C for 20-25 min turning half way through cooking time.
