Pumpkin Scones

Pumpkin scones


  • 1 ½ cups self-raising flour
  • ½ cup lupin flour
  • 1 tablespoon butter
  • ½ cup sugar
  • 1 tablespoon hot water
  • 1 egg
  • 1 cup of cold mashed pumpkin
  • a pinch of salt



  1. Cream the butter and sugar with the hot water. Add the egg and beat well.
  2. Add the pumpkin, then the flour and salt. Mix with a knife. If too stiff, moisten with a little milk.
  3. Shape scones with damp hands or roll out and cut into shapes (the mixture is usually quite sticky).
  4. Bake in a fairly hot oven for 10 minutes.
