Self-saucing Lemon Pudding

Ingredients

  • 4 tbsp Lupin flour
  • 1 tsp cream of tartar
  • ½ tsp bi-carb soda
  • ¾ cup sugar
  • 2 tbsp margarine
  • 1 ½ cup milk
  • Rind and juice of 2 lemons
  • 3 eggs, separated

 

Method

  1. Cream butter and sugar. Add egg yolks, lemon juice and rind.
  2. Stir in flour and then add milk.
  3. Fold in stiffly beaten egg whites.
  4. Pour into pie dish.
  5. Bake at 180C in a bigger dish of boiling water (Bain-marie) for 40-45 min.
