Vegemite and Curry Scones



  • 1¾  cups Lupin Flour
  • 2 tbs sugar
  • 1 tbs vegemite
  • 1½ tsp curry
  • 2 tbs boiling water
  • 2 eggs
  • 200ml cream (longlife)
  • 2/3 cup milk
  • 2 tsp baking powder
  • 2¾ cups self raising flour



Dissolve vegemite and curry in hot water and allow to cool. Beat eggs until light and frothy; add milk, cream and vegemite/curry mix. Lightly mix in flours and baking powder – don’t over mix. Pat out to 2cm thick and cut into scones with biscuit cutter. Place close together on baking tray.  This helps them rise and keep their shape. Bake in hot oven 10-12 minutes.

Makes approximately 2 dozen scones.
Variation – sprinkle cheese on top or mix into mixture or vary vegemite and curry to personal tastes.
