Whiting Fillets



  • 1 cup Lupin flour
  • Salt and pepper to taste
  • 500g whiting fillet (or other white fish)
  • 2 eggs (beaten)
  • 1 tbsp melted butter
  • Olive oil



  1. Stir melted butter and eggs.
  2. Season flour with salt and pepper.
  3. Dip fish into the flour, then into egg mixture, then into flour again.
  4. Leave to stand in fridge for ½ or until you are ready to cook them.
  5. Fry fillets in olive oil for 3 min each side
