Currant Cookies
Ingredients
- ½ cup Lupin Flour

1½ cups wholemeal flour

125g butter

1 egg

Pinch nutmeg

Sugar for sprinkling
- ½ cup castor sugar

3 tbsp custard powder

A little beaten egg or water

1 tsp cream of tartar
- ½ tsp bi-carbonate soda
- 1 cup currants
Method
Cream butter with egg then add beaten egg, stir in sifted dry ingredients and fold in currants.
Form into a ball and chill for 30 minutes.
Roll out dough thinly on a floured board and cut into shapes with a biscuit cutter.
Put on greased baking trays, brush with a little beaten egg and sprinkle with sugar.
Bake in a moderate oven (180°C) for 12-15 minutes.
Makes about 3½ to 4 dozen
