Currant Cookies

Ingredients

  • ½ cup Lupin Flour
  • 1½ cups wholemeal flour
  • 125g butter
  • 1 egg
  • Pinch nutmeg
  • Sugar for sprinkling
  • ½ cup castor sugar
  • 3 tbsp custard powder
  • A little beaten egg or water
  • 1 tsp cream of tartar
  • ½ tsp bi-carbonate soda
  • 1 cup currants

 

Method

Cream butter with egg then add beaten egg, stir in sifted dry ingredients and fold in currants. Form into a ball and chill for 30 minutes. Roll out dough thinly on a floured board and cut into shapes with a biscuit cutter. Put on greased baking trays, brush with a little beaten egg and sprinkle with sugar. Bake in a moderate oven (180°C) for 12-15 minutes. Makes about 3½ to 4 dozen
