Apricot Slice

Ingredients
  • 1 cup Irwin Valley Lupin Flour
  • ⅓ cup sugar
  • ½ cup honey
  • 200g dried apricots
  • ½ cup orange juice
  • ½ cup coconut
  • ¾ cup rice porridge or rolled oats
  • 3 eggs
Method
  1. Place apricots, orange juice and honey in a saucepan and heat gently, leave to cool.
  2. Add remaining ingredients and mix well.
  3. Mix in a little water if necessary.
  4. Spread in a well greased slice tin or line with baking paper.
  5. Bake at 180c for 30 – 35 minutes or until cooked.
  6. Cut into slices while still warm and ice with orange flavored icing.
