Apricot Slice

Ingredients
- 1 cup Irwin Valley Lupin Flour
- ⅓ cup sugar
- ½ cup honey
- 200g dried apricots
- ½ cup orange juice
- ½ cup coconut
- ¾ cup rice porridge or rolled oats
- 3 eggs
Method
- Place apricots, orange juice and honey in a saucepan and heat gently, leave to cool.
- Add remaining ingredients and mix well.
- Mix in a little water if necessary.
- Spread in a well greased slice tin or line with baking paper.
- Bake at 180c for 30 – 35 minutes or until cooked.
- Cut into slices while still warm and ice with orange flavored icing.
