Date & Walnut Slice

Ingredients
- ½ cup Lupin Flour
- 1 cup wholemeal flour
- 1½ tsp cream of tartar
- ¾ tsp bi-carbonate soda
- 60g walnut pieces
- 90g butter
- ½ tsp vanilla
- ¾ cup sugar
- 200g dates
- 2 eggs
- 2 tbsp sherry (optional)
Method
Sift flour,
cream of tartar and bi-carb into a bowl,
Stir in sugar, finely chopped walnuts and chopped dates.
Add melted butter, lightly beaten eggs, sherry and vanilla, combine well.
Press mixture in greased 28 x 18cm tray and bake in a moderate oven for 20 – 25 minutes or until cooked. When cold ice with lemon icing.
