Date & Walnut Slice

Ingredients
  • ½ cup Lupin Flour
  • 1 cup wholemeal flour
  • 1½ tsp cream of tartar
  • ¾ tsp bi-carbonate soda
  • 60g walnut pieces
  • 90g butter
  • ½ tsp vanilla
  • ¾ cup sugar
  • 200g dates
  • 2 eggs
  • 2 tbsp sherry (optional)

Method

Sift flour, cream of tartar and bi-carb into a bowl, Stir in sugar, finely chopped walnuts and chopped dates. Add melted butter, lightly beaten eggs, sherry and vanilla, combine well. 
Press mixture in greased 28 x 18cm tray and bake in a moderate oven for 20 – 25 minutes or until cooked. When cold ice with lemon icing.
